Preparation
An 8×8 inch pan (20 x 20 cm) pan has to be lined with parchment paper and kept aside. Then 118 ml (1/2 cup) warm water has to be poured into a bigger bowl (it should just cover the bottom of the bowl) and then gelatin is sprinkled over the water. Then it has to be whisked immediately and left aside.
Then add the remaining ½ cup water, sea salt, and powdered sweetener into a big saucepan and heat it over low to medium flame for a few minutes, stirring it frequently till the mixture is hot but not boiling and the sweetener dissolves. - Cold Water – 6 tbs
- Food-Grade Vegetable Glycerine – 107g (1/3 cup)
- Powdered Erythritol – 70 g (1/2 cup)

- Vanilla Paste – 1 tsp
- Vanilla Crème-Flavored Stevia Extract – ½ tsp
- Salt – 1/8 tsp
- Arrowroot Starch – ½ cup
Preparation
An 8×8 inch brownie pan has to be sprayed with cooking spray and then lined with parchment paper one way so that it can be removed later easily. In a big stand mixer bowl having a whisk attachment, the gelatin and water are to be added and then mixed till all the gelatin soaks up the water.
Then in a small saucepan, glycerine, water, and erythritol have to be whisked together. A candy thermometer is to be added to the pan which is to be placed in medium-high heat. When the temperature becomes 175oF then you have to cook for 3 minutes. Thereafter the heat has to be increased to high and cooked till the temperature reaches 200oF. Then it has to be removed from the heat.
The stand mixer has to be turned on low speed. Then the hot syrup has to be poured in slowly and carefully and then the speed of the mixer has to be turned to high. It has to be beaten for 4 minutes until it becomes shiny, thick, and voluminous. Now you have to add the salt and vanilla paste and beat for 2 more minutes.
Now you have to start working very quickly. Or else your marshmallow will start to set and it would be impossible to spread into the pan. As soon as you turn off the mixer, the whish attachment has to be scraped down and the mixture scooped into the prepared pan. Now spread it with an offset spatula. Then cover with a sheet of parchment paper and one other brownie pan of the same size. Something heavy has to be put on the top-layer brownie pan and keep it overnight.
